Ingredients
1lb Swiss Chard
2 cloves garlic, chopped
2 large tomatoes, chopped
½ cup sour cream or plain yogurt
8oz fettuccine, cooked according to pkg
1Tbsp olive oil
¼ cup chopped onion
½ cup lowfat milk
1/4 cup parmesan cheese
1/8 tsp salt
1/8 tsp pepper
Directions
Wash Swiss Chard, cut into small pieces.
Heat oil in large 2 quart saucepan over
medium-high heat 1-2 minutes.
Add Swiss Chard, garlic, and onion cooking 1-2 minutes, stirring occasionally. I like to cook a bit longer.
Add tomatoes, sour cream, milk, parmesan cheese, cooked fettuccine, pepper and salt
Stir well and serve warm.
Variation: Often I sauté chicken tenders or breast and cut it up into strips and add to the pasta at the end. You can also make this with Shrimp. To prevent overcooking the shrimp, I cook it in water and mix it into the pasta at the end.
